Hatsukokoro Chromax Walnut - 240 mm Chef's knife

Regular price £158.00
Taxes included.

Hatsukokoro is a brand from Amagasaki close to Osaka City. They collaborate with various blacksmiths and sharpeners around Japan and develop new series in an attempt to make some of the best knives in the world, but also really good knives in a lower price range to be able to supply all different needs.

The Chromax series is a true laser: very light and really thin behind the edge, but also at the spine. They deliver a really good cutting experience for the price. The Chromax core steel is a semi-stainless steel that is very hard and will therefore hold its edge for a long time. As it is semi-stainless, it will develop a patina over time, but it is less prone to actual rust.

Like all other good Japanese knives, this knife is not dishwasher safe, and as the blade is not fully stainless, we recommend that you rinse and dry the blade very quickly after cutting with it, as it will otherwise begin to oxidise.

    Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
