Fish bone tweezers from Déglon's Fish Class series
The pin bones in a salmon or cod sit firmly, and an ordinary pair of tweezers either slips off or tears the flesh along with it. These have angled, bevelled tips that grip around the bone rather than crushing it flat — so it comes out whole and the fillet stays intact.
The grips have fitted plastic pads. It sounds like a detail, but when you are working through thirty fillets, the difference between cold angular steel and a softer grip is quite noticeable.
Stainless steel, dishwasher safe.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
